World News – AU – Local chefs keen to cook for PBA players at Quest Hotel

Local chefs are eager to prepare dishes for the PBA teams, who are currently housed at the Quest Hotel in Clark, Pampanga

MANILA – Local chefs are preparing dishes for the PBA teams, who are currently staying at the Quest Hotel in Clark, Pampanga

The Quest Hotel will host the PBA over the next two months as the league prepares to host its Philippine Cup in a « bubble », with matches taking place at the Angel University Foundation gymnasium (AUF )

According to Clark Development Corporation (CDC) President and CEO Noel Manankil, players are now asking for sizzling sisig included with meals delivered to their rooms

« Quest management (hotel) has received a request from players to include sisig in their meals, » Manankil revealed during a recent video conference between the CDC, the Conversion Authority and development of bases, Samahang Basketbol ng Pilipinas (SBP), PLDT and Leaders of TV5

A valuable recipe part of Kapampangan culture, sisig was named the best pork dish in the world by New York Times columnist Ligaya Mishan in 2014

Sisig would be the creation of Lucita « Lucing » Cunanan from Barangay Claro M Recto in Angeles City

Her trademark began with a burnt pork ear in the mid-1970s that she was reluctant to throw away Aling Lucing annealed and spiced pork ears with fresh pork face and served the dish to the US military stationed at the former Clark Air Force Base

One of the local chefs who could give a new take on this culinary treasure is Kapampangan chef Vince Garcia Discussions are underway with Quest Hotel-Clark to call on Garcia to specifically prepare this local dish

Other local chefs are also being considered so that local culinary delights can be served to the PBA teams

These include authentic Kapampangan dishes such as arobo or adobong Kapampangan (meat cooked in vinegar and garlic), bulanglang (sour guava soup), buro (fermented rice) and betute (stuffed frog) Desserts include Tibuk-tibok (maja blanca), Turrones De Casoy (cashew fritters) and putong San Nicolas (cookies)

All these are subject to the approval of the PBA in view of the food and nutritional needs of the players

Bubble players have so far been pleased with the food prepared by the staff at Quest Hotel, as seen in their various social media posts and vlogs

With the inclusion of other local chefs, players, coaches and other staff can request other culinary delights while staying at Clark
