Toasting a champagne flute at midnight may be the usual way to ring in the new year. But we all agree that 2020 was anything but ordinary. To bid farewell to 2020 and usher in 2021, we asked the bartenders to share their favorite cocktails, suitable for celebrations.

With local twists of the classic French 25 to a Santa Fe mezcal cocktail, here are 13 special cocktails with champagne (and other bubbles!) recommended by hotel bartenders.

Serea’s Gail Westmoreland at the Hotel del Coronado in Coronado, California loves using classic cocktails for inspiration. « In A Pear Tree » takes a classic French 75 for a spin, « she says. The combination of the spicy pear and the hearty sage in a dry champagne creates a multi-layered cocktail experience in which all components can be in the spotlight. â ????

Instructions: Put gin, pear puree, lemon juice and sage honey in a shaker with ice, shake and strain into the champagne flute. Top with champagne and garnish with a pear slice and sage leaf. * Sage honey is made by adding a few sage leaves to a warm honey and water mixture until the desired taste is achieved.

« I describe this cocktail as a vacation in a glass and it’s my take on a sparkling piña colada, » says Jake Larragoite, bartender at the Parq Central Hotel in Albuquerque, New Mexico. The egg white gives the cocktail a silky, velvety texture that this thick, beautiful meringue creates when sparkling wine is poured over it, he says.

Preparation: Mix rum, pineapple juice, egg white and simple syrup in a shaker with ice and shake well. Shake dry and strain into a large stone glass. Top with 4 ounces. Sparkling wine and three dashes of tiki bitters.

Liam Ransom of Halcyon, a hotel in Cherry Creek, gave the French 75 a twist with a local gin.

« I’ve always enjoyed French 75s » and I have a crush on what Leopold Bros does here in Denver. Colorado is known for peaches every year and the peach liquor shines through the whole cocktail, ???? Ransom says.

Instructions: Shake all the ingredients in a shaker. Place double fine strain in the top of a flute with champagne and garnish with a lemon twist.

Caleb Cherry, lead bartender at Tune-Up at the Kimpton Armory Hotel in Bozeman, Montana, tops this cocktail with a sprig of rosemary, which gives it a nice smell quality when sipped. What I love most about this cocktail is the balance between sweet notes and the dryness of sparkling wine. Says Cherry.

Instructions: Combine all of them except Prosecco. Shake with rosemary feather, strain finely and pour into the champagne flute. Top with Prosecco and garnish with bamboo or fresh berries.

Dominick Gudino of the Advenire Hotel in Greater Zion, Utah shared this recipe. For his cocktail, he uses Alpine Gin from Park City, a local, award-winning gin that contains a mixture of botanicals such as a woody and tangy juniper berry as well as coriander seeds, ginger, cardamom, lemon peel and more.

Alan Walter, the liquor dealer at the Loa Bar at the International House Hotel in New Orleans, uses a peach-infused brandy for this Crescent City version of a French 75.

Instructions: For the peach-enriched cognac: Cut the peaches into thin slices and dehydrate them. Infuse the sous vide at 155 degrees Fahrenheit for 2. 5 hours. For the peach syrup: cut the peaches in half and press them flat. Let the peaches simmer in a simple syrup [1: 1] for 30 minutes. Mix the cognac, lemon juice, peach syrup and Angostura bitters in a cocktail shaker. Serve in a champagne glass and top with the sparkling rosé. Garnish with a lemon wedge.

The desert flower was created by John Cuviello, director of food and beverages, and Sara Davis, beverage manager at La Fonda at the Plaza Hotel in Santa Fe, New Mexico. With a beautiful pink hue and festive effervescence, the cocktail delivers optimism â ???? something we all need to go to 2021.

Instructions: Put the first three ingredients in a shaker and shake with ice. Pour the mixture into your favorite glassware and top it with 1. 5 ounces Moà «t & Chandon Imperial Brut. Garnish with a lemon wedge.

This cocktail has vegans in mind. « Instead of using egg white for the foam, we use aquafaba, a viscous water made from chickpeas that mimics the properties of egg white. « says Victor Guerrero, mixologist at Casa Amate Restaurant at Andaz Mayakoba Resort Riviera Maya, Mexico.

Instructions: Put the first five ingredients in the shaker and shake them dry (without ice) so that the aquafaba breathes and flows. Open the shaker to make sure there is foam (if it doesn’t, shake it dry again). . Add ice and shake again. Strain twice in a cold coupe glass. Add a dash of Clicquot to help the foam stir up more. It also helps the gold particles float, making it look like the cocktail is made of gold. .

« Just like we want our 2021 to go: Simple in its ingredients and instructions, but vibrant in color and flavor profile, » says Christopher Harding, Apron bartender at the Kimpton Overland Hotel in Atlanta, who shared the recipe for this champagne cocktail.
